| Metod of Production |
Drying of the grapes on the vine, with picking up in November. Destemming and crushing, followed by cold maceration on the skins for several days and light pressing. Fermentation in oak with the addition of selected yeasts, at a controlled temperature of around 20° C for three months, until an alcohol content of 11% is reached. Ageing in barrels for 14 months, followed by bottling. Refining in the bottle for several months |
